The Tramontina Tri-Ply Base is the pan Wirecutter recommends specifically for induction cooktops, and the construction explains why. Instead of bonding a magnetic disc to the outside of an aluminum pan, Tramontina builds the base from three layers — stainless steel, aluminum, stainless steel — which heats more evenly and resists warping better than a single-layer disc. On an induction hob, even heating matters more because the magnetic field only energises what's directly above the coil.
At 10 inches it's sized for one to two people: a couple of eggs, a single chicken breast, or a pan of sautéed vegetables. That's a deliberate trade-off — this isn't a family pan, but it's the right size for a small induction zone and it fits comfortably in a standard dishwasher. The 18/10 stainless steel body gives it a premium feel that belies the price.
The nonstick coating is reinforced but not metal-utensil safe — use silicone or wood. The 10-inch size limits what you can cook in a single batch, and the pan doesn't come with a lid, which restricts steaming and covered cooking.
