Baking is less forgiving than cooking because it's chemistry with a narrow tolerance. When a bake fails, the cause is almost always one of two things: you measured by volume, or your oven wasn't the temperature it claimed.

You can fix both for under $80, and doing so will improve your results more than any recipe change or ingredient upgrade.

A scale is not optional

A cup of flour can vary by 20% depending on whether you scooped or spooned it, how settled the bag was, and how much you packed it down. That variance is enough to turn a tender crumb dense, and it's the reason the same recipe works one week and not the next.

Look for 1-gram increments and a tare function. Precision at low weights matters most for yeast, salt, and leaveners, where being a couple of grams out is the difference between rise and no rise.

Verify your oven's actual temperature

Home ovens routinely run 15 to 25°F off their dial, and they cycle above and below the set point as the thermostat kicks in. If your cakes brown on top before setting in the middle, temperature is the likely culprit rather than the recipe.

An instant-read thermometer also tells you when bread is done — internal temperature is a far more reliable indicator than tapping the base and hoping.

Do you actually need another oven?

Probably not, and it's worth saying plainly: countertop ovens in this price range are not precision baking instruments. If your built-in oven has hot spots, a thermometer that tells you how far off it runs will improve your results more than a second appliance will.

Where a large countertop oven does help is volume. Having a second oven means baking two trays at once, or roasting while something else bakes — useful if you bake in batches, but that's a capacity argument rather than an accuracy one.

Frequently asked questions

Do I need a separate oven thermometer?

A dedicated hanging oven thermometer is more convenient for monitoring ambient temperature continuously, but an instant-read probe tells you what you need for far less and doubles for checking doneness.

Grams or ounces for baking?

Grams. The units are smaller, so rounding errors are proportionally tinier, and most serious baking recipes are written in grams. Any of these scales will switch between both.
